An important focus for me is educating people about coeliac disease, food intolerances, gluten, its minutia and the gluten free diet.

For more than 20 years I have been teaching the student dietitians in Sydney and Wollongong Universities about coeliac disease, gluten and the gluten free diet. I also contribute to their food intolerance lectures.

As much as possible I take opportunities to address other health professionals, the food industry and the public on these topics.

Gluten-Free’ really 100% Gluten-Free - Webinar

In 2020, in collaboration with Glutagen I gave a webinar on the topic “Is Gluten Free really 100% Gluten Free?  Why it matters”. This webinar goes into detail of what gluten is and the difference between Gluten Intolerance and Coeliac Disease. It also describes some of the problems with hidden gluten, faced by those eating gluten free. It concludes with a mechanism of action for an enzyme called GluteGuard, sold by Glutagen, that can break down small quantities of gluten. The webinar discusses the context in which GluteGuard might be used.
